Have you tried Guar gum? It works the same as Xanthan gum but perhaps it will be easier on your system. Worth a try (?) Oh, and it is alot cheaper!!

We don't use anything with xanthum gum as it causes horrendous gas in my IBS husband and pretty severe gas in me. So no salad dressings or gf four mixes for us!

I don't work with xanthan anymore because it is by product of corn. But when I did I found it easy to work with and I could use it interchangeably with guar gum in baking recipes. There should be direction on the package as well as most gluten-free…

try gillians.com. the bread is quite tasty and very reasonable. personally, i do not like the taste of xanthan gum. i would rather leave it out if possible.

If you cannot use xanthan gum. try adding 1/2 cup of sticky ice flour to the bread mix. Be careful how much you use or you will have a brick. Use baking powder, and soda to help. The rice flour can normally be found in asian markets.
