I remember you saying you have not worked since finding out you have Celiac. Thank you so much for answering back, and don't worry about rambling, I often do that myself. We have a large freezer that I never use, so making double batches when I do cook and freezing them is a great idea. And I know what you mean about finding out the foods you love are the ones that hurt you. I loved grilled zucchini and squash. I can eat nuts and love almond milk, and butter. I'll have to try the almond bread, would you send me the reciepe? I have a bread machine so I can make bread. I have started drinking smoothies again and I know this sounds gross but a frozen strawberry, frozen banna, smoothie with a handfull of spinach is REALLY good. Actually I used to throw a handful of romain or spinach in my smoothies all the time. I need to get back into the habit. Like I said before though, the hardest part is variety. I've never been a meat and potato/rice every night kind of person. I hate to say this, but its a comfort knowing I'm not the only one with these food allergies. When I read most of the celiac comments they mostly have gluten, dairy and soy. Some have nuts but I've not read of anyone who has vegetable issues. I thank God that I saw your post, I needed to know I was not alone.

I read a comment you posted when responding to a question about stomach pain after going gluten free. I was not diagnosed with celiac, I had been gluten free for a month before the blood test and while I went back on gluten before the biopsy, there was not enough evidence to suggest celiac. The GI specialist suggested I continue a gluten free diet since it seemed to work. Before the test I'd had stomach issues for the last 15+ years. My symptoms are mainly intense D where when I realize I have to go, I have to go NOW. I drive to the airport which is an hour away every three weeks, and I know every bathroom between my house and the airport. What caught my attention about your response was your comment about night shade veggies. I also tested positive for allergies to: tomato's, squash, zucchini, peppers, carrots, barley, malt, cabbage and lettuce. I give you this list because I am so frustrated! Before this I was a vegetarian, not for moral reasons, but because I enjoyed eating vegetables more than meat and I thought it was the meat that was making my stomach hurt so much. Now I don't know what to eat. And when I do eat something wrong my stomach hurts even more than before being gluten free. I have the intense D again and a week ago my stomach hurt for a week. I also have IBS and when I get really upset can have the same symptoms. I guess the bottom line is I was hoping you'd have some advice that can help me. I am not very organized when it comes to domestic chores and I home school so planning meals and cooking tends to be last minute which was fine when I didn't have to worry about what I ate. I am so frustrated and it's amazing the amount of recipes that have tomato's in them!
