About Me
Im 42 married with three kids 12, 9, and 7. I have been very sick for a long time. I first had diabeties 7 years ago. I learned what to eat and what not to eat and was able to control my glucose levels with foods. Over a three month period I have dropped 40 plus pounds. Not that I couldn't afford to lose some weight, just not in this manner. On Oct. 19th 2009 I was told I had laten sprue, ( celiac ). So I have CD, and have been trying to learn what to do. I have been to several web pages only to find that one site says I can eat this, another says not to eat this. I am having trouble finding clear labling on products in the walmart store that I shop in. Any help would be greatly appreciated, this whole thing is a bit over whilming to me right now.

Hi Dave,
Sorry for the delay in responding. It would make it easier to go entirely gluten free, but gf foods, especially bread are pretty expensive. You may be better off to buy a separate toaster, keep a separate butter dish, etc. depending on what kinds of food you like. Good thing is that there are a lot of good choices available now - some better than others.

Dave, I can relate, lots of puzzle pieces to sort through. Dehydration - not sure if it is directly related to Celiac, but since it's a systemic problem, it's certainly related to your whole diet. So, I'm not a doctor or a nutritionist, but I have tried lots of things to manage my own digestive system. These suggestions are only my opinions. First, I have eliminated tap water which is chlorinated and fluoridated. Chlorine messes with the good bugs in your gut, and fluoride messes with your whole body. I believe it is best to run water through a reverse osmosis filter, or buy it at a natural food store or coop that has a filtering machine. Second, make sure you are not canceling out your increased intake of water with foods and beverages that are also diuretics. I am addicted to coffee although it is a powerful diuretic. Tea, colas, asparagus, dandelions, mung beans (bean sprouts), chocolate, alcohol, even honey all have a diuretic effect. Of course, diarrhea will dehydrate you in no time, so try to find out which foods are causing it (I know - like finding the holy grail). I have not been diagnosed with Celiac (yet) but am definitely gluten intolerant. And I've had success getting help from a Chinese Traditional Medicine perspective, using herbs and diet advice. By the way, my 90 year old dad has had diabetes since he was 43, and last year he decided to go gluten free after suffering from diarrhea - has been able to reduce his insulin and is doing really well. He never cheats, manages his health like the engineer that he is (with very carefully kept records). Too bad I am not that disciplined. Anyway, hope this gives you some ideas to consider.

Thanks, Dave. I tried going on a gluten free diet last year, but gave in after 3 months. I have some health issues that I know, if I can stick to this diet, will greatly benefit me. My 9 year old son was also recently diagnosed with IBS and gluten intolerance (no Celiac) so we are both going gluten free. I am hoping that support here will help us to both be successful. Thanks for writing.

Hello Dave. I saw your picture and so I had to check out your page. Wal-Mart probably isn't the ideal place to look for GF Foods since most GF foods, as I am sure you know, is pretty expensive and good ones are hard to find. So I sell some foods on my site if you click through on the Gluten Free Mall links and banners. Maybe that will help you in your search for tasty GF foods. Best of luck!
