Hi Emily; check out this website; http://www.elanaspantry.com/ Her recipes are awesome. I have both the cook books and I can tell you the recipes are good. They fit perfectly with your diet restrictions. Good Luck
Yes, Emily! Your list is basically like mine, but I can't handle any grains. PALEO is what you want to look up, and suddenly you will have a million recipes you can handle!! The Paleo diet is grain and legume free. Don't bother with the old fashion drudgery info but go to modern blogs, cookbooks, etc. Message me if you need further direction!
Comment by Emily Jelassi on March 25, 2012 at 2:22pm Help, please! I'm still in the learning curve for baking/cooking gluten-free...very frustrating. I'm not just gluten-free. I'm also corn, potato, dairy, peanut. I'm allowed only a few grains: teff, quinoa, coconut, and brown rice; I can have the nut flours, just not peanut. I can use all the help I can get.
I know I can substitute arrowroot for something and tapioca for something else, but I'm not sure what for what. Is there a how-to for gluten/allergy-free baking & cooking website? I am a trained pastry chef, but this whole GFCF thing is confusing & frustrating...and expensive!
Any help and/or suggestions would be extremely helpful. Thanks!
Comment by pauline kendrick on March 5, 2012 at 6:27am my favorite is gf tuna bake so simple i can tuna 3 potatoes cup grated cheese half cup red sauce 1 oinion boil pots and oinoin mash with butter add tuna cheese and sauce mix put in greased dish in oven 20 mins oh sorry cup bread crumbs sprinkeled on tp gas mark 5 or electric 130 enjoy xx

Comment by veronica brill byers on February 11, 2012 at 9:20pm wonton wrappers (2 cups gf flour mixs,1 egg,3/4 tsp salt , 1 tsp guar gum 1/4-1/2 cups water (1. Sift flour into a large bowl amd make a well in the centre.Whisk together egg,salt and 1/4 cup water.Pour in to flour well.Miix together, adding additional water until the mixture will stay together in a ball.(You may need more or less then 1/2 cup,use your discretion. keep inmind that you do not want it to be sticky.)2 Knead dought until it become smooth and pliable. 3let res for 30-60 mim.(this is so can relax .the longer itsits the easier it will be to roll out)4. Divide dought in half dough in half. keep one half covered while you roll out the other oneon a surface lightly coated with cornstartch(if you use flour it may toughen it up) roll out thin as you possiblt can)5 cut in to 3.5 into squares (you should be able to get approx.12 wonton wrappers out of each halft(makes 24( I adapted this from a wheat recipe I found it work the bast the the gluten free recipes I fine the gluten free one call for oil and it didn't work out as good as this one dose , in joy them we did when i made them
