Hola a todos me llamo Angeles,
Hello Every one my name is Angeles,

Me acaban de diagnosticar intolerencia al gluten y al huevo y estoy queriendo aprender de esto. Ya he estado navegando en internet y tengo algunas dudas ya que muchas recetas hablan de panes (waffles, galletas, etc.) …. pero esos tienen huevo. ¿Me pueden ayudar? Tambien quiero saber si en Mexico hay Cerveza para Celiacos y si el vino tinto se puede tomar?

I just got the news that I am allergic to Gluten and to Egg and I am trying to learn about this. It is so interesting to read about the dry skin since I ahve suffered from it since I was 6 years old. I have been going around internet and I have some doubts about recipes since many of them are with eggs specifically bread (waffles, cookies, etc.). So what could be a subsitiute? Is there gluten free beer in Mexico? Can we drink red wine?

Angeles, I am from the States, so I am not sure about gf beer in Mexico. Here in the States there are several gf beers, (I think there are couple of them from AB).
There are egg substitutes, but I dont use them so I cant help you there. I have given up on bread and bread products all together. It was tough in the beginning, but is much better now. It may be something you want to consider since gf bread is horrible. As for the wine, yes, you can drink wine. Tequila (Petron is I know for sure, I contacted the company myself) is also gluten free. Most of the vodkas (top shelf) are also.

This site is absolutely wonderful and you will learn a lot of things from others on here, that you will not learn from your doctors. Are there other things that you are allergic to?
Pasta has wheat in it also, in case you are not aware of that. There are a lot of good pasta's out there. Tinkyada is my favorite brand. It is rice based, but not sure if it has eggs or not.

I dont know if any of this has helped you or not, but I hope some of it has.

In the states, there are many egg substitutes that allow you to follow basically, any recipe by using them instead so those with egg allergies have little trouble. Hopefully, it is the same where you are. I, too, gave up on gf bread products. If they taste good at all, they are filled with lots of fats, etc and are very expensive or very time consuming to make. I hope you find lots of ideas on this site. I love it!

Thank you much for your advise I will go and see about this rice based pasta. Yes as you tell me the doctor told me not to eat wheat, oats, amaranto... only rice and white corn (he told me the one we have in Mexico not the yellow nice looking one that comes from USA).

Thankyou for the tip on Tequila and Vodka taking advantage of this would you know if Whiskey (JW Blue label) would be gluten free?

Is nice to know some others are in this way too!

Thank you for your advise. I will keep looking into the site to learn more and more. I will start my scouting to see what I can get gf in the stores and start going on my new diet. I read the note also about the dry skin, and yes I was identified to that too!

I am not sure about whiskey. I dont drink that, it makes me feel like I swallowed acid! I do know that the Dekyper products do possibly have a "little wheat or rye" but the distilling process when done, has irradicated the gluten. I love Apple Pucker with green grapes crammed down into the bottle, let sit over night. On float trips, we would pass the bottle around, and you have to keep drinking until you actually suck a grape out! Its a lot of fun, but I dont think I will be drinking this any more. I did drink it once while being gluten free, and although, I did not get sick per-say, I did have terrible bloating and gas and an upset stomach. I was not in a fetal position like other times. Not sure if it was the pucker, but not willing to take that chance! It is just awful the things we have to give up!!!!

María: No, en México no hay cerveza para celíacos... lástima!!!
Te recomiendo entres al blog a la parte de productos o alimentos aptos, ahí encontrarás unos productos de Noemy, ella hace sin lacteos, sin huevo, sin gluten; son buenos... También te recomiendo Kvalitet, son productos poblanos, pero si entras a su sitio web puedes pedirlos y te los mandan... o en Palacio de Hierro y Liverpool encuentras los Santiveri, algunos son libres de leche y huevo... y de gluten... Yo estoy a tus órdenes, ahora en Guadalajara, pero recien llegado del DF, así es que en lo que pueda ayudarte...

María: debo decirte que el Whiskey no es libre de gluten. Me extraña que Jen te comente lo del vodka; sé que hay algunas marcas libres de gluten, pero al menos que lo indique no olvidemos que se hace con granos derivados de centeno, por lo que no es recomendable para los celíacos... El Vino sí lo es, porque deviene de la uva... recuerda que todo aquello donde se implique la cebada, el trigo, el centeno y la avena -por el proceso de industrialización- no es recomendable para los celíacos; es más, es prohibido... Todo aquello que se hace con caña, agave, etc, es lo mejor... el tequila lo puedes tomar con toda libertad, la marca que sea... no bebidas preparadas, porque ya implica otros agregados que no sabemos de donde vienen... mejor derecho, con un limón y sal y pa'dentro... jejeje... salud!!!

Gracias por toda la información. Empezaré a incursionar en esto de las tiendas con alimentos libres de gluten y huevo. Que bueno que tenemos los nopales y las torillas.
