I know I'm not entering the contest since I do not have a photo but I just wanted to share this....I loved the peanut butter filled pretzels in the years before I knew I had to be gluten free so I've really missed them....past tense. Now I dip your pretzels in peanut butter and ENJOY!!!!

I want to win! Here is my recipe:

Gluten Free Squash Casserole

1 medium onion, chopped
4-5 medium yellow squash, washed, scraped, and cut up
salt and pepper to taste
4 eggs
3 slices gluten free bread, torn into pieces
1 stick butter
1 cup crushed Glutino Pretzel Sticks

Put the onion and squash in a saucepan, cover with water. Bring to a boil, then reduce heat and let simmer until squash is tender, about 20 minutes. Drain off water, add 1/2 stick of butter (or margarine if you prefer) and let sit until cool.

Add the bread and eggs, and mix well. Pour into a greased casserole dish. Sprinkle the top with crushed Glutino Pretzels. Dot with remaining butter. Bake in 400 degree oven for 20-25 minutes.

My family has loved this squash casserole for years, and it was one of the first things I converted to gluten free when I started eating a gluten free diet. The Glutino Pretzels give the top just the right crunch.
